I found this video on YouTube of POV video of a mountain biking session using a GoPro. There's video footage of trails high in the mountains and on lower nice gravel trails. Of particular interest is video footage going down various stairs and the biggest footage is a first-person view of hitting a big jump in a contest.
If you really want to take this up a level, put this into a VR system like Google Cardboard and you feel like you're there it's so immersive.
